(24 - 26) 3 recipes not worth typing up

Boo. I hate that. I am not sure I'd call them stinkers, per se. But they are not worth posting the recipe for....

Cajun Shrimp Dip
- The flavor on this dip was GREAT, but the consistency was like clam chowder. WAAAY too runny. It would be great on fettucine or over rice, though! Love the idea, but it needs some tweaking.

Light & Easy Lasagna


- The homemade sauce for this was AWESOME, but the filling was 'eh'. The recipe just had you put the ricotta in without mixing an egg in. My head told me to just add one anyway, but I didn't and regretted it. We will certainly eat this, but it needs some tweaking before I share it.

Buttermilk Pralines

- Ok, the flavor on these are OFF THE HOOK. Insanely good.... But the consistency was kind of grainy. Maybe I ovecooked them on the stove? Or maybe they're just supposed to taste like that?! Someone? Anyone?!

(37) Healhty Pumpkin Pancakes

This recipe is one that I feel 'eh' about. I was prepared to LOVE them, but I didn't. They were very dense and I think that was part of the problem. In my mind, pancakes should be light and fluffy. We ate them, but I won't repeat this recipe as is.

Does anybody have a pumpkin pancake recipe that they love? Healthy or not, I'd love to try it, so please email me or post them in the comments!! Thank you!

PS: I think my whole wheat flour has gone bad. Maybe that was part of my problem? Who knows?!


Healthy Pumpkin Pancakes

SERVES 16

2 cups whole wheat flour (I use whole wheat white flour)
2 tablespoons brown sugar (I use Splenda Brown sugar baking blend)
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon allspice
1/2 teaspoon ginger
2 cups nonfat milk
1 teaspoon vanilla
3 tablespoons olive oil (so much better for you and doesn't affect the flavor)
1 cup canned pumpkin

1. Mix all the dry ingredients well.
2. Mix all the wet ingredients in with the dry ingredients until there are no clumps.
3. Cook on medium heat until the edges look dry, then flip.
4. Remember, these pancakes will be dense and thick. This is how they are supposed to turn out.
5. Super good with REAL maple syrup!
6. Enjoy!

(11) A stinker!

Blah. I haven't been in the kitchen much because we've been sick and germy since the beginning of February. Sinus infections, ear infections, bronchitis, and the stomach flu among the 3 of us. Fun times! Anyway, so I decided to cook dinner the other night and came up with this stinker. I HATE STINKERS.

I'm not even going to type the recipe out, but it's Cooking Light's Hot and Sour Soup with Shrimp recipe from 2006. The shrimp was like rubber, the tofu was floppy (should have gone for the extra firm) and it just had an overall weird shrimpy flavor. I'm bummed because I wanted it to be good but alas, it wasn't! Oh well! Onward and upward!
